Prawn sandwich with brioche (prawn roll)

An easy, quick, fresh, delicious, light, and very simple recipe! If you don't like prawns, you can substitute them with anything else you prefer. This is a great combination of mayonnaise sauce, the freshness of cucumber, herbs, and the sweetness of toasted brioche bread with butter. Serve your sandwich with fries, and you'll have a dinner worthy of a food truck! :D
Ingredients
For the mayonnaise sauce:
- 75 ml mayonnaise
- juice of 1/2 lemon
- 1 tsp Dijon mustard
- 1 Tbsp chopped parsley
- 1 Tbsp dill
- 1 Tbsp sunflower oil
- 1/2 tsp salt
- 1/2 tsp pepper
For the sandwich:
- 100 g cooked prawns
- 1/2 cucumber
- 2 green onions
- brioche (unsliced)
- some butter

Preparation
Step 1:

For the sauce: In a bowl, mix all the sauce ingredients and set aside.
Step 2:

For the filling: In another bowl, cut the prawns into pieces, chop the cucumber into very small pieces, and add the chopped green onion stems.
Step 3:

Pour the sauce over the filling and mix.
Step 4:

Cut the brioche into thick slices. Make a slight cut in the center without cutting all the way through.
Step 5:

In a pan, melt some butter and toast the brioche on both sides.

Fill the brioche with the prawn mixture, and you're done! Serve with fries and enjoy!
