Easy chicken stir fry

This easy chicken stir fry brings together tender chicken thigh fillets with crisp vegetables in a simple ginger honey soy glaze. Ready in just 30 minutes, it’s the perfect weeknight dinner. Serve over steamed rice for a complete meal the whole family will love.

Ingredients

1 tablespoon honey
¼ cup (60ml) light soy sauce
1 teaspoon finely grated fresh ginger
500g chicken thigh fillets, diced
2 tablespoons peanut oil
100g snow peas, trimmed
1 large zucchini, sliced thinly
5cm piece fresh ginger, extra, cut into matchsticks
steamed rice, for serving
snow pea sprouts, to serve

Method

1.

To make the marinade, combine the honey, soy sauce and the grated ginger in a large bowl. Add the chicken and toss to coat, then cover and refrigerate until ready to cook.

Place a wok or large frying pan over high heat. Add 1 tablespoon of the oil and cook the chicken, in batches, until browned and cooked through. Transfer to a bowl and set aside.

Add the remaining oil to the wok and cook the snow peas and zucchini for 2-3 minutes or until tender. Add the extra ginger and continue to cook for 1-2 minutes. Return the chicken to the wok and toss to combine.

4.

Serve ginger chicken stir fry with steamed rice and top with snow pea sprouts.

Tips for making a stir fry

High heat is key when stir frying. Overloading the wok or pan can bring the temperature down.

For maximum flavour, marinate the chicken in the fridge for at least 30 minutes before stir frying, or overnight if time permits.
