Abandoned for decades, this old Utah building now serves an egg-celent breakfast

Logan • When Amber Christensen and Robyn Monk stopped serving a breakfast favorite in 2024, the decision left a bagel-size hole in Cache Valley’s heart.

The pair, who had just opened their own storefront for Le Croissant after growing the business working out of Caffe Ibis’ kitchen, found that breakfast lovers weren’t shy about sharing their feelings.

“They’d say, ‘When are you bringing the bagels back? I can’t believe you stopped selling the bagels.’ The bagels, the bagels, the bagels,” she said. “I understand, because people would show up for months expecting to get bagel sandwiches, but it was over, and they’d be like, ‘No!’”

Eventually, Christensen and Monk gave in.

Christensen knew the endeavor would bring in so many customers that it would need a spot separate from Le Croissant, so the pair started Fairway Bagels and Donuts. The bakery, born from the community’s bagel mourning, opened March 5.

A beloved bagel’s beginning

When Christensen started baking pastries to sell at Caffe Ibis in October 2022, she said she wasn’t planning to serve bagels at all. But in March 2023, after the coffee shop’s owners asked her to make them, she found the bagels were a hit.

A year later, after Christensen and Monk moved Le Croissant to its own storefront, and started offering its artisan bread menu, they found that simultaneously making bagel sandwiches was stretching them too thin.

They decided to bag the bagels.

Now, Christensen said eager bagel-lovers can reconnect with their old favorites — relatively simple morning delights like a bacon and egg bagel with Peppadew pepper jelly, or more intricate options like an al pastor bagel with house-smoked pulled pork, or one with house-cured and -smoked salmon.

Customers looking for something lighter can skip the sandwiches and order plain bagels with smear, and pastry aficionados can try the doughnuts Fairway has added to the menu.

To capture a nostalgic vibe, the owners settled on the building at the corner of 400 South and 400 West in Logan, one that Christensen said has been abandoned for 50 years.

The building, Christensen said, used to be the home of Fairway Market — a small neighborhood grocer.

“The developer — his mom actually used to come buy penny candies from here and sit on these steps and eat her little penny candies,” Christensen said. “I just decided to call it Fairway to honor the history of the building.”

Everything at Fairway is made in house, she added — Monk prepares meat in a custom-made smoker sitting just outside the shop, and Christensen prepares the bagels and pastries in the basement.

“We get as many meat products locally sourced as we can, we love working with local farmers,” she said. “We just kind of focus on doing everything from scratch. I like to use organic central milling flour.”

Shop is ‘a big hit’

Late last week, eager customers lined up to get a taste.

Jonathan Allen said he was thrilled to have a new spot near his home. He likes the cheese bagels, and his young son favors whatever doughnuts have sprinkles.

“I’ve lived on the west side of Logan for a while, so I love places like that are sort of entrenched in the community,” he said.

Sandra Almonte, who was waiting for breakfast with her family, said they used to live in the area and were excited to check out the new installment.

“We think it’s a big hit,” she said.

Watching happy customers walk in and out of her busy shop as a delivery truck dropped off ingredients, Christensen said her and Monk’s priority is making the food good — not fancy.

“We love to make the best food that we can,” she said. “We’re not pretentious.”
