Still the city's most talked-about food truck, cult-favorite Brave Idiot has become a destination for fried chicken sandwiches, but owner Dylan Field wants you to try something else: his tomato sandwich.
"It's not what I'm known for," Field said. "However, it is what I'm excited for."
The seasonal special features tomatoes from Hancock Family Farm and a mayonnaise infused with the same spices used in the truck's hot chicken. For Field, it's less a departure than another expression of the same cooking philosophy.
"If you pay attention to what I do, it's really not off the cuff," he said. "It's just a different way of doing the same thing without chicken."

And while chicken may be king at Brave Idiot, don't overlook the burgers. Made with Bear Creek Farm beef and served on carefully selected buns, they're among the most thoughtfully crafted smashburgers on the road.
It's a reminder that beneath the hype, Brave Idiot remains a chef's project driven by ingredients, creativity and a willingness to do things differently.
"I'm so proud of using Bear Creek beef," Field said. "I'm so proud of the buns I use. I'm so proud of everything."

Asked which Nashville food trucks he admires, Field quickly named Inka Trailer, Dream Burger and Pepper Pot. The Inka Trailer is indeed one of the best in the city, but currently, that chef, Marcio Florez, has his hands full running his also-amazing Limo Peruvian Eatery.

Egg Drip

One of the most distinctive trucks in Nashville, The Pepper Pott specializes in Guyanese Caribbean cooking that's difficult to find elsewhere in the city. The family-owned operation serves scratch-made dishes inspired by generations of culinary tradition, from jerk-spiced proteins and rice and peas to sweet plantains and Caribbean-style sandwiches.
