With only 5 minutes of prep and no complicated techniques, it’s the perfect last-minute slice for lunchboxes or afternoon tea. The crunchy texture from the Weet-Bix combined with the rich chocolate topping makes this slice seriously addictive.

Ingredients

4 Sanitarium Weet-Bix
1 cup self-raising four
3/4 cup brown sugar
3/4 desiccated coconut
1 cup dark cooking chocolate
150g butter
150g dark cooking chocolate, chopped

Method

1.

Preheat oven to 180C. Line a 26 x 16cm slice tin with baking paper. Crumble Weet-Bix into a large mixing bowl. Add flour, sugar, coconut and chocolate and stir to combine.

2.

Melt butter, add to Weet-Bix mixture and stir to combine. Press mixture into prepared tin and bake for 20-25 minutes. Stand on a wire rack to cool. Melt chocolate over a bowl of simmering water. Stir till smooth, cool slightly and spread over slice. Leave for an hour or until chocolate is firm. Cut into squares to serve.

Cook’s Tips! Try any wholegrain breakfast cereal in place of Weet-Bix, such as oat flakes. Better yet, mix them all together!
