Chicken and cucumber sandwiches

These elegant chicken and cucumber sandwiches are a classic teatime favorite. Perfect for afternoon tea, luncheons, or special gatherings, they’re simple to prepare and always go down a treat.

Ingredients

½ cup (120g) sour cream
2 tablespoons mayonnaise
1 tablespoon finely chopped tarragon
2 teaspoons finely grated lemon rind
350g poached chicken breast fillet, shredded finely
4 slices white sandwich bread
2 Lebanese cucumbers (260g), peeledinto ribbons
4 slices wholemeal sandwich bread

Method

1.

Combine sour cream, tarragon and rind in a small bowl; season. Stir in chicken. Place white bread on a board. Spread with chicken mixture. Top with cucumber ribbons and wholemeal bread. Trim crusts; cut each chicken and cucumber sandwich into 3 ribbons.
