Cornflake cake mix cookies

These easy cake mix cookies are a super simple twist on Cornflake biscuits. You’ll be blown away by these chewy and crunchy delights. Ready in 25 minutes, these are the perfect snack to whip up for lunch boxes, parties or as an after-school snack.

Ingredients

340g vanilla cake mix
125g unsalted butter, melted
½ cup (80g) sultanas
1½ cups (75g) cornflakes, crushed lightly

Method

1.

Preheat the oven to 180°C (160°C fan-forced). Grease and line two large baking trays.

2.

Place cake mix into a large bowl. Add butter and 2 tablespoons water and stir until well combined. Add sultanas and stir until evenly mixed through.

3.

Place crushed cornflakes into a bowl. Roll tablespoons of cake mixture into balls. Roll each ball in cornflakes, pressing gently to adhere. Place 3cm apart on prepared trays, pressing down to flatten slightly.

4.

Bake for 12 minutes or until light golden. Cool cake mix cookies on trays.
