Bursting with zingy fresh citrus and chewy coconut, this lemon coconut slice is sure to become a most requested bake among your family and friends.

“I am quite often asked what my favourite ingredient is, and although the answer to that can change from day to day, I almost always come back to lemons. Thankfully I live in a citrus-growing area, so there’s no shortage of them. From adding a lift to sparkling water, an acidic zing to dressings and seafood, and of course as a premium flavour for sweet dishes, they really have it all. This lemon slice uses both the sharp juice and the fragrant zest for a lemony delight.

Ingredients

250g salted butter, chopped
2 cups (430g) caster sugar
4 eggs
1½ cups (225g) plain flour
1 cup (85g) moist coconut flakes
2 lemons, zested and juiced
icing sugar and double cream, for serving

Method

1.

Preheat oven to 180C fan-forced. Grease and line a 20 x 30cm slice pan with baking paper, extending the paper 3cm above the long sides.

In a large, microwave-safe bowl, melt the butter in 30 second bursts in the microwave until it is liquid.

Add sugar, stir vigorously with a whisk until combined. Making sure butter mixture isn’t hot, beat in eggs one at a time.

Sift the flour over mixture and use a spatula to carefully fold it through. Add coconut, lemon zest and ¼ cup lemon juice; stir through again, until well combined.

Bake for about 30 minutes until firm and golden brown. Remove from the oven; allow lemon slice to cool before sprinkling with icing sugar and serving with double thick cream.

How long does lemon slice last?

If you intend to keep the lemon coconut slice for more than 2 days, store the uncut slice in an airtight container at room temperature. Cut pieces from the slice as you need it. This way, the cut surface is reduced, so the slice will keep fresher for longer.

If you’ve dusted it with icing sugar, you might need to give it a fresh sprinkle before serving as the sugar can absorb over time.

Can you freeze lemon slice?

This lemon slice can be frozen for up to 2-3 months. To freeze, wrap individual pieces or the whole slice tightly in plastic wrap followed by foil, or place in an airtight freezer-safe container. We recommend cutting it into portions before freezing – it makes it so much easier to grab a piece or two when you need a sweet treat.

To serve, simply thaw the lemon slice overnight in the fridge, then bring to room temperature. Our tip: Freeze without the icing sugar dusting, then add a fresh sprinkle once thawed for that perfect finishing touch.
