My Chicken Caesar Wrap Beats The Deli's Any Day

Ingredients

  • 1 c.

    white bread, cut into ½” cubes

  • 1 tbsp.

    plus 1 tsp extra-virgin olive oil

  • 3/4 tsp.

    garlic powder, divided

  • 3/4 tsp.

    Kosher salt, divided

  • 3/4 tsp.

    freshly ground black pepper, divded

  • 1

    large chicken breast (about ½ lb.) sliced in half lengthwise.

    dried oregano

  • 1

    head romaine lettuce, chopped

  • 2 tbsp.

    finely grated Parmesan

Directions

  1. Preheat oven to 375°. On a rimmed baking sheet, toss bread with 1 teaspoon olive oil, ¼ teaspoon garlic powder, ¼ teaspoon salt, and ¼ teaspoon pepper. Spread in a single layer and bake until golden and crisp, 10 to 12 minutes.
  2. Meanwhile, season chicken on all sides with oregano and remaining ½ teaspoon garlic powder, ½ teaspoon salt, and ½ teaspoon pepper. In a large skillet over medium-high heat, heat remaining 1 tablespoons oil until shimmering. Cook chicken, turning occasionally, until both sides have a nice sear and an instant-read thermometer inserted into thickest part of breast registers 165º, about 8 minutes per side.
  3. Transfer chicken to a cutting board. Once cool enough to handle, slice chicken into strips.
  4. In a large bowl, toss chicken, croutons, lettuce, Parmesan, and desired amount of Caesar dressing; season with salt and pepper
  5. Divide salad among tortillas and wrap up burrito-style. Slice in half and serve.

How To Make Chicken Caesar Wraps

INGREDIENTS

  • Croutons: With this wrap, I wanted to put an end to the debate of whether croutons belong in a chicken Caesar wrap (spoiler: they do), but I encourage you to make your own golden wonders out of white bread, olive oil, and some basic seasonings like salt, pepper, and garlic powder. They come together in less than 15 minutes and make a huge difference.
  • Chicken: I’m using a chicken breast here. The white meat in the breast is exactly what you think of in a classic chicken Caesar, and is the perfect way to absorb all of the flavor from the same seasoning mixture as the croutons, and all that delicious dressing.
  • Romaine Lettuce: Romaine is the classic option for a Caesar, and I wouldn’t have it any other way here. The lettuce leaves provide a nice fresh crunch and plenty of green goodness.
  • Caesar Dressing: If you really want to go above and beyond, feel free to make your Caesar dressing from scratch at home, but store-bought dressing also works great.
  • Parmesan: You wouldn’t call a chicken Caesar salad complete without a grating of fresh Parmesan on top, so don’t sell yourself short on your chicken Caesar wrap. The nutty Parmesan adds an extra richness to the wrap and helps to build on the little bit that is already present in the Caesar dressing.
  • Tortillas: I think flour tortillas work best here. They are soft, slightly chewy, and are the perfect way to contain all of those classic chicken Caesar flavors all in one hand.

STEP-BY-STEP INSTRUCTIONS

To start off, we need to make the croutons. Preheat the oven, and as it heats, toss the cubed white bread with olive oil and the seasoning mixture until each cube is evenly coated, then spread the cubes out in a single layer on a rimed baking sheet. Pop the sheet into the oven and bake the croutons for 10 to 12 minutes until golden brown and crisp.

As the croutons bake, season the chicken breast on both sides with oregano, garlic powder, salt, and pepper. Then heat a tablespoon of oil in a large skillet until shimmering and add in the chicken, cooking undisturbed for about 8 minutes on each side. You will know the chicken is cooked when an instant-read thermometer inserted into the thickest part of the breast registers 165° and each side has a nice sear.

Transfer the cooked chicken to a cutting board and allow to cool until it is cool enough to handle. Then slide the chicken into strips.

  • Prioritize what you want to make from scratch. You are more than welcome to make each element of these wraps from scratch, but part of the charm of a chicken Caesar wrap is its simplicity and ease. With elements like the croutons and Caesar dressing, I would argue you should pick your battles. Store-bought croutons are almost always lackluster, and never as crunchy and flavorful as the homemade versions. Plus, homemade croutons really couldn’t be easier. Caesar dressing though, is one I would recommend just opting for your favorite store-bought brand. Give yourself a break this time around!

What To Serve With Chicken Caesar Wraps

Classic mains call for classic sides. With something as simple and delicious as a chicken Caesar wrap, I like to keep the sides simple as well. Keep your healthy lunch healthy with a handful of baked sweet potato chips, veggie peel chips, or Cool Ranch zucchini chips. Or, go for the classic combo of chicken Caesar and French fries.

Storage

If you want to make these ahead of time, or just didn’t quite finish what you did make, no worries! The wraps can be wrapped tightly in foil and stored in the fridge for 2 to 3 days.
