‘Secret neighborhood bakery’ in Grand Rapids crafts new menu each week

GRAND RAPIDS, Mich. (WOOD) — For Saturday morning snackers and sweet tooths, nothing is better than a fresh pastry. One Eastown Grand Rapids baker isn’t flaking on the opportunity to meet the demands of a growing crowd. In fact, she embraces the challenge of scrapping and recreating a new menu of treats each week.

On a Saturday morning, a busy brunch crowd predictably packs Eastown. Around the corner, Anna Varchola is hard at work, conquering a full slate of pastry orders based on a menu she conceived of just days before. 

“I call it your secret neighborhood bakery,” Varchola said.

Hence the name: Midnite Patisserie. Its hushed underground roots stem from a love of baking that Varchola honed in on during the pandemic, serving friends and neighbors from her living room window.

“Anything you see on the menu is something I’m personally excited about,” she explained.

What excites Varchola is variety. Each week, she creates a brand new menu of around seven to 10 items. Sweet and savory, she draws inspiration from local markets, seasonal ingredients and classic French cuisine. 

“What you see on the menu is sort of like my personality,” Varchola said. “I like a lot of bright, happy, floral flavors. … I try and get everything local if I can.”

Crafting the menu is one thing. Varchola usually posts it online by 8 p.m. on Wednesdays. But then the orders start coming in.

“There’s usually so much going on that I am just from one corner to the other,” Varchola said. “But it’s always fun.”

A loyal and growing customer base keeps Varchola on her toes, prepping her new commercial kitchen space for a Saturday morning baking frenzy that starts usually around 3 a.m. — just a few hours ahead of pickup at 10 a.m.

“It is like a marathon every week,” Varchola said with a smile. “It’s a really cool rhythm. It’s always a lot of work throughout the week but it’s always worth it. It’s so satisfying to see something that wasn’t in existence on Thursday or Friday come to life on Saturday.”

Michael Kopinski has been enjoying the creations since the start, watching with delight as the business has taken off. 

“I’ve got a reminder on my calendar for 8 p.m. each Wednesday,” Kopinski explained. “I want to be sure to get first crack at the items that appeal to me. … She’s got a very creative mind.”

He says the concoctions are an authentic slice of Parisian cuisine. 

“I feel like I am going into a French pastry shop,” Kopinski said.

“I really want it to be a present when you open the box on Saturday,” Varchola said. “I don’t want you to know what to expect. I want it to be a total surprise.”

But that, of course, means wiping the slate clean and starting fresh each week. 

“It honestly is so fun. I’m feeling like, when am I going to get burnt out? But right now it’s just so cool and rewarding,” Varchola said. “I can’t imagine myself doing anything else.”
